This recipe was featured in our November issue, “Rocking Raw”. We went crazy for the delicious raw recipes that are both easy to make and good for you. Here’s how to make Creamy Garlic Cashew Hummus.
2 cups raw cashews soaked overnight
3 tbs raw tahini paste
½ cup avocado
¼ cup olive oil
Juice from one lemon
Clove of garlic
1 teaspoon parika or to taste
1 teaspoon salt or to taste
½ teaspoon cumin or to taste
Place all ingredients in a high powered blender or food processor and blend until smooth and creamy. Add paprika, cumin and salt to taste, garnish with additional paprika.
Serve with fresh cut cucumber and carrot slices.
